There’s nothing quite like a cosy lazy Sunday. As the days grow shorter and the temperature colder, I find myself using my slow cooker more and more frequently. I bought my crock pot the first autumn that I moved to the UK for ~ £10 and haven’t looked back. I used to use mine regularly in Canada, so I knew it would be a necessary kitchen accessory.
Slow cookers, crock pots, whatever you want to call them are the ultimate Lazy Girl kitchen tool. You can basically throw anything into one and have a fantastic meal ready in a few hours. So little effort, but so much taste!
I hate having to scroll through a blog for years and years to get to the recipe... So without further ado, here’s the recipe.
3 chicken breasts
5 crushed cloves of garlic
2 cups white wine
1/2 cup lemon juice
Lil bit of salt and pepper (use your judgement, whatever)
1 tbsp of thyme
1 tbsp of flour
1 chicken stock cube
Cut the lemons & leeks into slices.
Literally throw everything into the slow cooker on high.
After two hours, pour some of the juice (Gravy? Liquid? Idk, but you know what I mean) into a small saucepan. Add the stock cube. Boil it down for a bit, and whisk in the flour to thicken it* Once that’s done, serve however you feel. I served ours with a basic green salad & some oven baked fries (because #SlimmingWorld).
It was super tasty, made our house smell great and we have loads of leftovers for lunch tomorrow. Also… it was soooo easy, perfect for Lazy Girls!
*If you’re avoiding gluten, probably don’t add flour (but who am I to tell you what to do).
